The recipe arrived in Java Edition 1.21.6 with the Chase the Skies drop, Bedrock Edition uses the same pattern, and leatherworker trades, chests and fishing still hand out saddles without crafting.

How to make a saddle in Minecraft
The recipe is three squares wide, so the 2×2 grid in your inventory cannot hold it; you need a crafting table.
- Collect three leather and one iron ingot.
- Open a crafting table to get the 3×3 grid.
- Place one leather in the middle square of the top row.
- Place one leather in the left square and one in the right square of the middle row.
- Place the iron ingot in the center square, between those two leather.
- Take the saddle from the output slot and move it into your inventory.

Since Java Edition 1.21.6, monster room (dungeon), ancient city, desert pyramid, jungle pyramid and stronghold altar chests hold 1 to 5 leather in place of saddles. Bedrock Edition dungeon chests also hold 1 to 5 leather and no saddle, so skip dungeons when you are hunting for one.
How to check the saddle crafted correctly and put it on
- Look at the output slot after placing the iron ingot; a saddle appears there only when the layout matches the grid.
- Move the saddle into your hotbar and select it.
- Hold the saddle and use it on a horse, donkey, mule or pig (right-click on PC).
- Check that the saddle now shows on the animal's back.

Recipe not working? Try this
Nothing appears in the output slot
An item is in the wrong square, or the recipe is in the 2×2 inventory grid.
- Open a crafting table rather than the inventory grid.
- Put one leather in the top middle square.
- Put leather in the left and right squares of the middle row and the iron ingot between them.
- Clear every other square.
The saddle is missing from the recipe book
The recipe unlocks only after you pick up leather for the first time.
- Pick up one leather.
- Reopen the crafting table and search the recipe book again.
- Lay the items out by hand if the book still hides it; the recipe works either way.
The recipe does not exist in your world
Saddles had no crafting recipe before the Chase the Skies drop, Java Edition 1.21.6.
- Open the Minecraft Launcher and set it to the Latest Release option.
- On Bedrock Edition, install the current update from your platform's store.
- Load the world again and retry the recipe.
Raw iron in the center square makes no saddle
The recipe needs a smelted iron ingot, not raw iron.
- Place the raw iron in a furnace or blast furnace with fuel.
- Collect the iron ingot from the output slot.
- Return to the crafting table and put the ingot in the center square.
Shears will not take a saddle off a mob
In Java Edition, shearing fails when the mob has a rider, when you are crouching, or when the mob is a ravager.
- Get the rider off the mob.
- Stand up rather than crouching.
- Use the shears on the mob again; a dispenser with shears cannot remove saddles.

Why was the saddle uncraftable for so long?
Mojang treated saddles as relics from a bygone age that nobody in the world knew how to make. With no recipe, the supply was finite, and once the saddles in a world were gone they were gone.
